RECIPES - One-Pan Creamy Garlic Parmesan Chicken and Broccoli

One-Pan Creamy Garlic Parmesan Chicken & Broccoli
Ready in 25 Minutes | Serves 4
Ingredients:
- 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 2 cups broccoli florets (fresh or frozen)
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream (or half-and-half for a lighter option)
- ½ cup grated Parmesan cheese
- ¼ cup chicken broth (or water)
- 1 tsp Italian seasoning
- Salt & pepper to taste
- Juice of ½ lemon (optional, for brightness)
Instructions:
-
Heat the Pan: In a large skillet, heat olive oil over medium-high heat. Add chicken pieces, season with salt and pepper, and cook for about 5–6 minutes until golden brown and cooked through. Remove chicken from the pan and set aside.
-
Steam the Broccoli Hack: While the chicken is cooking, place broccoli florets in a microwave-safe bowl with 2 tablespoons of water. Cover and microwave for 2 minutes—this will speed up the cooking process and keep the broccoli vibrant and tender!
-
Sauté the Garlic: In the same pan, add minced garlic and sauté for 30 seconds until fragrant (careful not to burn it).
-
Make the Sauce: Add heavy cream, chicken broth, and Italian seasoning. Stir well and simmer for 2–3 minutesuntil slightly thickened.
-
Bring It Together: Add the chicken and broccoli back into the pan. Stir in Parmesan cheese and cook for another 2–3 minutes until everything is coated in the creamy sauce. Adjust seasoning if needed and squeeze a little lemon juice over the top for brightness (optional).
-
Serve & Enjoy: Serve warm over rice, pasta, or on its own for a low-carb option.
Time-Saving Hack:
Steaming the broccoli in the microwave while the chicken cooks saves valuable time and ensures the broccoli stays bright and crisp without getting mushy!
