Fast, Fresh, Affordable Veggie Stir-Fry with Ramen.

 

A quick stir-fry using budget-friendly ramen noodles with whatever veggies you have on hand and we literally mean "whatever" you have on hand. There are so many ways to recreate this recipe that during busy event weeks, it is a mainstay on our family menu. You can change it up to make something different every time and the kids absolutely never complain. Oh and consider adding a protein for a nutritious twist. 

Ingredients:

  • 2 packs of organic ramen (we like Ocean's Halo)
  • 1 tbsp butter or oil
  • 1 cup mixed seasonal or frozen veggies (broccoli, bell peppers, diced onion, snow peas, and carrots etc.)
  • 2 tbsp organic soy sauce
  • 1 tbsp organic honey - to taste
  • 1 tsp garlic powder or minced garlic
  • ½ tsp ground ginger (optional)
  • 1 scrambled egg (optional, for extra protein)

Instructions:

  1. Cook ramen noodles according to the package, but drain them 1 minute early so they stay firm.
  2. In a pan, heat oil over medium heat and stir-fry veggies for 3-4 minutes.
  3. Add garlic, soy sauce, honey, and ginger, stirring for another minute.
  4. Toss in the drained ramen and mix well.
  5. Add scrambled egg if using, stir, and serve hot!

Time-Saving Tip: Use frozen mixed veggies to skip chopping and speed up prep time.

Recipe tips - sesame oil adds beautiful, rich flavor, however most of the time I prefer to use butter. This recipe is wonderful with any grouping of vegetable favorites.The sky is the limit... mushrooms, bok choy, scallions, shrimp, Fresh seasonal vegetables give it a frequent twist. You can adapt the recipe to add a protein choice such as chicken, shrimp or beef for a flavorful healthy twist. Add a little red pepper flakes and or sesame seed for a more variety of flavors. Use your imagination and create away.
