5-Minute Banana Oat Pancakes
This is one of the absolute best five minute breakfasts and we absolutely love it in our home. While costs for everything to make breakfast seems to be through the roof... in Danish we say it's "costing the white out of your eyes!" outside of the eggs, costs for ingredients in this recipe have remained pretty consistent. Even with the insane cost of eggs these days, you can feed your family with this recipe using just two. Costs aside... the flavors are just WOW!
While oats are still one of those reasonable ingredients, who wants to eat oatmeal every day? This is a great way to enjoy them with a little twist. We enjoy these with a variety of toppings... sometimes mixed berry fruits, with little scoop of home made whipped cream and a sprinkle of powdered sugar. Other times some Vermont Maple Syrup and fresh banana slices. But the all time favorite, is honey dipped banana (just drizzle a little honey in a bowl and mix in banana slices) topped with a light sprinkle of cinnamon.
Ingredients:
- 2 ripe bananas
- 2 eggs
- ½ cup rolled oats
- ½ tsp cinnamon
- ½ tsp baking powder (optional, for fluffier pancakes)
- 1 tsp vanilla extract (optional)
- Butter
Instructions:
- Blend all ingredients in a blender or mash bananas by hand and mix everything in a bowl.
- Heat a nonstick pan over medium heat and lightly grease it.
- Pour small rounds of batter onto the pan and cook for about 1-2 minutes per side until golden brown.
- Serve warm with honey, fruit, or a sprinkle of cinnamon!
Time-Saving Tip: Make a big batch and freeze extras—just pop them in the toaster when you need a quick breakfast!
